FARMER CLASS
Walk through the cacao forest and learn all about Theobroma cacao from a dedicated organic farmer and passionate cacao expert committed to sustainable farming
A.M. In the morning, we’ll dive into soil composition, understanding its role in healthy tree development and organic farming. We’ll then move on to study trees, flowers, and fruits, covering their full growth cycle, pollination, common diseases, and how they’re managed naturally without harmful chemicals. Next, we’ll examine the farm’s cacao varieties, focusing on their shapes, colors, and physical traits. You’ll learn what makes certain types special and why some are ideal for grafting or growing from seed.
P.M. After our lunch break, we’ll explore the principles of organic farming and learn about fertilizers derived from organic and natural sources. Then, we’ll harvest cacao pods, giving you the chance to taste the fresh pulp and experience the variety of flavors the fruit offers before it’s placed in fermentation boxes.
MASTER CLASS
A.M. We’ll have the opportunity to witness the fermentation process firsthand, engaging all of our senses. During a visit to the local centro de acopio (collection point and post-harvest center) of Guardabosques de la Sierra, we will learn from a master in cacao fermentation and drying. You’ll gain insights into the challenges and collaborative efforts of the farmers, explore the logistics of cacao post-harvest, and understand how these processes affect the quality of the cacao. The session will conclude with a comprehensive cacao evaluation, where we’ll examine various types of beans to deepen our understanding of cacao assessment.
P.M. After two immersive days, we will end with the planting of a cacao tree, a moment we like to call the ‘Cacao Ceremony.’ This symbolic act is our way of giving back to the forest—a seed planted for the future and a meaningful reason to return to the heart of the world
